You can (almost) not go wrong with casseroles, because they taste good and you quickly have a good meal on the table. Even large groups, when friends come to visit or the whole family announces itself, are well fed with casseroles. Christian Henze presents new recipes and explains the most important preparation rules.


Spaghetti gratin and green asparagus Ingredients:

  • 500 g spaghetti
  • salt
  • 2 chicken breast fillets (approx. 150 g each)
  • 250 g green asparagus
  • 1 small onion
  • 100 g pancetta or streaky bacon
  • 2 tablespoons of olive oil
  • 1 cup of white wine (approx. 150 ml)
  • 2 cups of liquid cream (approx. 250 ml)
  • freshly ground black pepper
  • 150 g parmesan, freshly grated
  • 2 tbsp butter
  • 1 scoop of mozzarella (approx. 125 g)

preparation:


  • Bring plenty of water to a boil in a large saucepan and salt well. Cook the spaghetti al dente, drain and drain well.

  • Wash the chicken breast fillets, pat dry and cut into small cubes. Cut off the asparagus ends, peel the lower third, and cut the stalks into thirds. Peel the onion and chop finely. Also finely dice the pancetta. Heat the oil in a pan and fry the meat cubes vigorously, salt and pepper.

  • Add the asparagus, onion and the bacon and also sauté well. Remove everything from the pan, deglaze the base with wine and bring to a boil. Then pour in the cream. Bring everything to a boil and season with salt and pepper.

  • Mix the spaghetti and the other ingredients back into the sauce and stir in approx. 100 g grated parmesan.

  • Season again with salt and pepper and then pour the contents of the pan into a refractory, slightly buttered form. Sprinkle the rest of the parmesan and the mozzarella on the gratin and place a few flakes of butter on top. Place the gratin in the oven preheated to 250 ° C (top heat) for 5 minutes.

Quick apple casserole

ingredients:

  • Apple casserole and sliced ​​apples
  • 120 g of flour
  • 130 g of sugar
  • 100 g butter
  • 2 apples (e.g. Boskop)
  • 4 tbsp applesauce
  • 1 vanilla bean

preparation:


  • Preheat the oven to 175 ° C.

  • Put the flour, sugar and butter in flakes in a bowl. Quickly knead into sprinkles with your hands.

  • Peel and core the apples and dice the pulp. Mix the apple cubes and applesauce.

  • Slice the vanilla pod and scrape out the pulp with a knife. Stir the vanilla pulp into the apple mixture.

  • Spread apple mass on fireproof bowls or plates and pour the crumbles over them. Bake in the oven for 20 minutes. Serve lukewarm.
